One Piece is one huge story that is cut up into arc. One finds oneself rapidly caring for the characters and going along with them through a emotional roller coaster, as "ghey" as that sounds...
The art is amazing.
The anime was mostly true to the manga, however with it constantly catching up to the manga the anime is being injected with filler which is ruining it.
When filler was a separate arc that was okay, however now they just insert filler into regular episodes, they hold frames forever, pan across something 4 times longer then they should of just to eat up time.
